Our Cheeses

Group Sheep 1310.jpgIt started with a creamy soft, fresh sheep’s milk cheese we called “Driftless;” the name, like the cheese, a product of the terrain which surrounds us. And with a little help from our friends and a hat tip to our bohemian heritage, we’ve used our cave, and our curiosity, to create a family of distinctive sheep’s milk cheeses for every palate. From raw milk, washed-rind varieties, delicately crumbly blues, semi-soft or semi-hard depending on which side of the fence you fall, and a fluffy, distinctive feta, which tastes like no other feta you’ve ever eaten.
